I’m not turning into a food blogger nor do I claim to know much of anything about cooking. But there’s a short season where I actually enjoy making and eating salads, and that time is now. I’ve shared some of my favorites in the past, which I still stand by, especially this kale salad, and this one with herb roasted potatoes. I am the first to admit that I rarely do the cooking in my house, but I’ll also be the first to let everyone know when I do make something, lol.

I don’t think it could sound any more basic, but I have found a lot of comfort in making food. When things feel overwhelming (and depressing), which kind of seems often lately (?), making food is a way to turn off my overthinking brain for a little while. So if you’re getting a sense of where my head’s at these days, I’m clinging to the things that help me stay grounded instead of feeling like I’m spinning out.

Anyway, on to the salads, because I also don’t want anything overcomplicated, these are seriously easy AND hold up well if you’d like to take them on-the-go. I’ve made them to share with friends, for picnics, and for large groups, but they’re also great for dinner at home. I hope you enjoy. Stay sane out there friends, or not, I get it either way!
